Finca La Josefina is a small, quality-focused farm run by Ligia Merizalde and Leopoldo Andrade, with lots frequently sold as traceable microlots. Their coffees are commonly associated with the Cayambe Coca reserve zone, a highland environment that tends to produce slower cherry development and crisp, layered cup structure.
This lot is an anaerobic washed coffee, meaning fermentation is managed in a low oxygen closed environment before the coffee is finished as a washed lot. The intent of this style is usually to add extra aromatic intensity and fruit character while keeping the finish cleaner and more “washed-like” than many naturals.
In the cup, expect a juicy, sweet fruit profile with a tidy, structured finish, with notes of stone fruit and baked fruit sweetness (think mango or nectarine), plus toffee and vanilla aromas. This is also an excellent filter coffee and our current Feature Filter, if you want an elegant cup full of clarity or an espresso that is acid forward with subtle fruity sweetness.
