Santa Monica is one of the Cofinet family’s farms in Quindío, Colombia. This is a core specialty region in Colombia’s coffee axis, with lots grown around 1,450–1,500 metres above sea level. The farm’s volcanic-influenced soils and mountainous conditions are often highlighted as part of why coffee produced here shows such high aroma intensity and sweetness.

This Chiroso is listed as a Natural with an EF2-style controlled fermentation followed by slow drying (often on raised beds), designed to push fruit character while keeping the cup vibrant and full of flavour. Expect a loud, fruit-saturated cup. Think red grape, watermelon, tropical fruit, peach, strawberry, and perfumey florals driven by that fermentation. A candy-like sweetness that can lean into fresh raspberry or vanilla notes depending on the brew.
