Ombligon is a rare variety of coffee, which translates to ‘Belly Button’ in English. This comes from the unique shape of the elongated cherries that have a belly button shape at the base.
This coffee was grown by Maria Teresa Salazar at the farm Los Pinos. This coffee is harvested following strict ripeness criteria, floated and hand-sorted to remove any defects. cherries were then exposed to 30 hours of underwater fermentation before being pulped. The parchment was then gently washed and then dried in temperature-controlled conditions until ideal moister content was achieved.
