The latest release from our ongoing collaborative Filter sourcing project with our friends Pigeon Whole Bakers, which celebrates our shared love for refined and elegant flavours. Staying true to our mutual love of washed coffees, we have selected a beautiful lot from Colombia called Finca El Diviso for our fourth release of the program.
Finca El Diviso is a family run farm in the south of Huila, Colombia. The Munoz family oversees a 14 hectare farm, consisting of a range of many different coffee varietals including this beautifully sweet and fragrant Pink Bourbon lot. They focus on a patient processing style, in which cherries are picked and rested for 28 hours, before being pulped and fermented for 36-72 hours in airtight containers. The coffee is then washed and dried for 20 days, resulting in a beautifully aromatic profile full of Nectarine, cola, and toffee apple notes.
