Cristian Lavan is a young producer, with only one hectare of land on his farm, El Manantial. He has had great success with the Cup of Excellence, ranking in the top 20 for Peru twice in the last two years. He ferments the depulped lots for 22 hours before washing and drying them under a plastic cover in the greenhouse for 20 days.
