La Victoria is a fully certified organic farm, owned by 72 year old Vitaliano Merino. Merino has dedicated his life to growing coffee, with a 15 hectare estate with over 20,000 plants. The Merino family pick only ripe cherries, float them in tanks, de-pulp them, and ferment for 20 hours before drying in raised beds for 5 days.
